I am highly against the specific protection of white deer, being white is a negative trait for deer in these habitats, it's part of natural selection to kill them, but I'm not proposing to specifically kill them either, they should be treated the same as normal-colored deer, which is a normal prey item.

It's just a gene, are they trying to preserve that gene? The number of white deer that survive to adulthood is a reflection on human enroachment and eradication of the apex predator species (bears, wolves and cougars) in their habitat. Once upon a time it was considered sacred, back when it was rare and impressive for an animal to survive in to adulthood with albinism, but if the only animals hunting them (humans) are avoiding the white ones that is the gene that will be passed on. The albinism gene will be favorable to ensuring survival.

i saw dead piebald deer a few days ago actually. roadkill. these deer aren't special, leave them be or hunt them. i don't really care.

I am aware, but cows are considered sacred too, should they be protected by law aswell? We can't let spirituality/religion dictate government sanction, every thing is sacred and/or taboo to some. While albinism isn't technically a dangerous genetic disorder it's certainly not optimal for a temperate forest species

I did know that in certain other cultures white animals are considered sacred or special.

Anyway.

To me it is okay if the protection is done on local level, preferably by the people themselves.

Protection by local people on private land is fine, but a state making law protecting it anywhere is unacceptable.
